Curry Chicken Thighs

Chicken Thighs are my favorite part of the chicken. They have the best flavor and tend to stay juicy even if you overcook them. This recipe combines a great Indian inspired flavor and is also quick and easy to prepare.

INGREDIENTS:

  • 12 chicken thighs
  • 1 cup butter, room temperature
  • 1/2 red onion, chopped finely
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon curry powder
  • salt and pepper to taste

PREPARATION:

Preheat grill. Combine butter, onion, garlic and curry powder. Mix well. Coat chicken thighs with olive oil and season with salt and pepper. Place about 1 tablespoon of curry butter mixture under the skin of each chicken thigh. Place chicken on hot grill, buttered side up.
